2 cups of rice (cook as usual)
8 eggs
100 g kanikama
1 C H206 T Soy Sauce
6 T Vinegar
4 T Sugar
1.5 T potato starch
green onion - a whole bunch - divide into 2 bowls
prepare rice
combine eggs, kanitama and 1/2 green onion
cook as omelette to desired doneness using 1/2 T veg/sunflower/neutral oil and 1/2 T of sesame oil
Prepare sauce - 1 C water combined with soy, vinegar, sugar and starch - whisk together in cold pot then turn on heat and whisk constantly until thick and clear
My own personal notes ... thinking to maybe reserve scallion whites to add to pan with oil before adding rest of omelette.
