Popovers (as seen on Glenn and Friends)

1 cup  cold milk

2 eggs

1/2 t salt

1 T melted butter

1 C flour

Crack eggs into milk, add salt and melted butter, whish, add flour gradually and whisk until smooth.

(That is how Glenn did it - original recipe says to add liquid slowly into flour ...)

fill mini popover pan (2 c volume total for pan) - each cup should be 2/3 full

Start in cold oven. Grease the cups - oringal recipe said not to but Glenn's stuck. Place them into cold ovn then set to 415*F

Check after 30 minutes but should be done around 45 minutes

Pan Fried Pork Chops

 1 T butter

1 T veg oil

2 thick cut bone in pork chops (1-1.25" thick)

2 t seasoned salt

1/2 t ground black pepper

1/4 C AP Flour

Place flour in a plate for dredging

Pat chops dry and season with salt and pepper on both sides

Dredge in flour

Melt butter and oil in large heavy skillet over med-high

Add chops to the hot skillet and cook until browned on both sides and a meat thermometer registers 140°F – 145°F (about 7-10 minutes per side). Smaller bone-in pork chops will cook in 5-6 minutes per side - rest before serving
